Grilled Sea Whelk with Crab Meat, Pumpkin and Dried Lychee is a perfect blend of fruity notes and umami flavors. When mixed with pumpkin, the fruit perfectly balances the sweetness of the sea whelk and crab meat. Litchi Chinensis Bacterium, the rare wild fungus that only grows on lychee trees, is also on the menu. To fully preserve its delicate sweetness, our chef gently steams this prized ingredient with first cold-pressed peanut oil.
